Clean, Separate, Cook, Chill. Wait, What is that about?

How hot has it been this week in New Jersey! Yesterday is was in the 90's and humid. Next week brings July 4th parades, picnics and fireworks. Do you have big plans to celebrate? I just got back form the grocery store and I'd say it's busy with shoppers loading up on big packs of ground beef, hot dogs, rolls, and watermelons.

Did you know you should always rinse off your watermelon as well as any other fruit before your cut into it. What ever germs are on the outside and going to be on the inside as soon as your knife cuts through that fruit skin.

During the Summer months bacteria is happy growing in the heat of the days. Be sure to keep your food prep areas clean and keep your food at the proper temperature to avoid illness. Don't leave food out of the refrigerator for long periods of time. Follow the 4 steps below to help keep you and your family feeling good and enjoy all the Summer picnics.

Use a meat thermometer when cooking any meats, on the grill, stove or campfire. Your hot dog might look well done on the outside and might be cold inside!

4 Steps to Food Safety:
·         Clean: Make sure you clean all utensils, hands, and surfaces with soapy water. If you’re going to be outside, using a moist towelette is a good idea.
·         Separate: Don’t put meat items back on the same plate you used for the raw meat! Make sure you bring two plates for grilling and separate raw meat from fruits and veggies.
·         Cook: Hamburgers should be cooked to 160 °Fahrenheit before serving. Remember, just because it’s brown doesn’t mean its safe, use a food thermometer every time.
·         Chill: The general rule is to never let food sit at room temperature for more than 2 hours, but once the temps reach 90 °Fahrenheit, that’s reduced to 1 hour.

It's crowded so leave extra time to get to the show.

Visit the displays and exhibits on the boardwalk
Take along cash to buy food, drinks, and souvenirs
It is loud, bring earplugs if you are sensitive to loud noises

EASY summer GRILLING with Cheese Recipes  from:

Ariane Duarte, Executive Chef of award-winning CulinAriane restaurant and finalist on Bravo’s Top Chef, recommends the following entertaining tip, “Guests love to feel pampered and one way you can do that is to replicate the restaurant experience at home. I created these simple restaurant recipes using Finlandia cheese because of its incredible robust flavor and great melting quality.” 

Duarte suggests arranging your favorite toppings in a bountiful array using assorted condiments and aged cheeses such as Finlandia Swiss, Light Swiss or Lacey Swiss.  Swiss has the perfect flavor for many summer recipes. For individuals looking for lighter choices, Lacey Swiss and Light Swiss are both so tasty that your guests will never know they’re actually eating something good for them.  Finlandia cheeses melt slowly and thoroughly, but maintain their texture and superior flavor.  
 
 All the cheeses pair well with a variety of different main dish proteins like turkey burgers, hamburgers or even grilled chicken. “If you choose great ingredients, you won’t even need the condiments,” advises Duarte. “Be creative with different types of local greens or lettuces and when it comes to cheese, be sure to select a high-quality cheese like Finlandia because your guests really will taste the difference.”
 
 

Grilled Cheese



Prosciutto and Finlandia Grilled Swiss Cheese with Olive Tapenade

Serves 4

¼ lb. imported prosciutto

1 package Finlandia Swiss sliced cheese

8 slices sliced country white bread

4T butter

Olive Tapenade

1c olives (your choice) – pits removed

2 cloves garlic

1t red pepper flake

1T olive oil

1T chopped parsley

 
Add all ingredients to a food processor and pulse about 6 times.

Spread tapenade on all 8 slices of bread. Then add a slice of cheese and a slice of prosciutto to only 4 slices and top with each of the remaining 4 slices.

Melt butter on a griddle and toast “sandwiches” golden brown and until cheese melts.

 
 

Jumpin' Turkey Swiss Burgers small
 
 
Jumpin’ Turkey Swiss Burgers

Serves 6

2 lbs Ground Turkey

1 or 2 jalapeƱo peppers, small dice (depending on how much heat you like)

½ c chopped cilantro

1T ground cumin

1t chopped garlic

1 small onion, diced

Salt & pepper

12 slices Finlandia Swiss or Light Swiss Cheese

6 burger buns of your choice

In a bowl, combine all ingredients. Divide equally into 6 balls. Form into patties and place on grill. Grill on high heat - 4 minutes on 1 side, then turn and finish for about 3 to 4 minutes on the other. Add two slices of Finlandia Swiss and let melt. Then, place on your bun with your favorite accompaniments.
 


Grilled Chicken with Summer Tomatoes and Finlandia Lacey Swiss Cheese

Serves 6

6 boneless, skinless chicken breasts

2T olive oil

1T fresh rosemary chopped

1T fresh thyme chopped

1T fresh basil chopped

Salt & pepper

2 Jersey fresh tomatoes

1 package Finlandia Swiss or Light Swiss Cheese

Preheat grill to medium high. Place chicken breasts in a large bowl and add olive oil, herbs, salt and pepper. Let stand for about 10 minutes.

While chicken is marinating, slice tomatoes into 4 pieces. Brush with olive oil, salt and pepper and grill for about 1 minute on each side. Remove from grill and set aside. Next, place chicken on the grill and cook for about 4 minutes, turning over to complete the cooking for approximately 4 more minutes. After that, top each of the chicken breasts with a tomato slice, then a piece of cheese. Continue to leave the chicken over the heat only long enough to melt the cheese. Remove immediately, platter and serve.

Disney on the road in New York City by way of automobile with a little pixie dust help.

I loaded up the car and headed to New York City-myself and another fellow blogger that is.  When my family and I go to New York City, my husband is the driver,  on my bucket list was to drive myself there. I don't mind driving anywhere, even in the city.  Well, at least I think so...

We got into the city OK, but the navigation system was heading us to Queens. (sounds like another post, right?)  I am so thankful my co-pilot said no, we don't want to go that way. We eventually found our way to Double Tree Hotel on Lexington Avenue and in time for the conference to start. We were not late, a bit frazzled, but not late.

We each received a tote bag filled with Disney goodies:






Disney on The Road had several stops around the country where invited moms, and even a few dads where in attendance.  We were served a delicious breakfasts and had plenty of ice cold water to drink throughout the morning.


 
 

Maria Bailey of BSM Media spoke to us about Women in business. Moms as business women need more attention as business owners. They contribute 1.7 million dollars to the US economy. That's something to take note of. She also told that our children are watching what we do-follow your passion, achieve your goals. This is what your children are learning from you and will realize they can follow their dreams too.

The social Media manager of Disneyland, Gary Buchanan spoke to us next. He is a happy, energetic man and was very personable. You can follow him on https://twitter.com/Gary_Jerry, and you should!  He filled us in on the new happenings at Disneyland and Walt Disney World.

The key note speaker was Jennifer Labit, she is the creator of Cotton Babies.
She told her story of how she created a company from her home and with a savings of $100. Her company now sells millions of dollars worth of merchandise a year.

She spoke about taking risks, learn from risks, learn from failure, and be willing to succeed. Make one change at a time, then you will know if it worked or not. If not make another change. Create a concept and get followers. Interact with people, and don't echo what is already out there.

Jennifer spoke about picking your boundaries. During family time be with your family, don't work. Do that when they go to bed or during your work time. Family time is family time.

And this is interesting: have an out. What will you do when you no longer do what you are doing? Will your product continue to be made, will your blog still post? Have an exit strategy. Your interests grow, move on look ahead.

Tuesday night I attended the screening for "Man of Steel" at a theater in Cherry Hill, New Jersey, I'd like to tell you all about the pre event, the zillion anxious people waiting on line for hours to see this film-but that's another post...

Luckily I was able to meander my way to the door and ask the security guard where the media rep was. It took some time and eventually I found my seat.  Roll the film-please.




Man of Steel opens with Superman  (Henry Cavill)  as an infant with his parents, who are trying to save Cal (superman) from the war on his planet.  His father (Russell Crowe) sends him to earth  with all his hopes and dreams. His parents place him in a pod craft and send him out into the galaxy headed toward earth.   He is found by a couple (Kevin Costner, Diane Lane) who raise him as their own. Do they know he has super powers? Where did he come from? Why is he here?

The beginning of the film is a bit of science fiction, but gives the story of Superman's birth and why he has the power to be Man of Steel. It was a good refresher for me and for a new generation of Superman fans.

On earth, Louis Lane (Amy Adams) encounters Superman at one of his many nomad lifestyle jobs he has though out the film. He moves from town to town, job to job always using a different name. He is a bit of an outcast on earth, not knowing what to do with his super powers until he needs them to save mankind.

At the end of the film, wait I'm not going to give the ending away-but I will tell you that I enjoyed the film and that there were a zillion people waiting on line and that tells me how excited people are to see the film.

He is a modern day Superman with modern day super powers. Yep, he still can stop a locomotive and lift up tall buildings, and is gorgeous. But, that's not what the film is about. It's about you and I and heart. The heart to live together, peacefully, and humbly.
