It's time to move our kids out of their dorm rooms for the year. Campus BellHops brings the strength to get the job done.

Tomorrow we will be moving my daughter home from her Freshman year at college. When we moved her in to her "Castle" because she really did live in a castle, the soccer team was there to ferry all her things to her third floor room. Living in a castle did not warrant an elevator or lift, and there are flights of stairs. Imagine Harry Potter's living quarters, and that gives a pretty good picture of where she lived this year.



How are we going to get all that stuff down three flights up zig zag stairs cases?  

this is the main stair case, then it's two flights of these zig zag steps. It's a work out.

Dad and she will have to figure that out. Better yet, we can have Campus BellHops do the work, yes Campus BellHops. Wish they were around when I went to college. I lived on the 8th floor of a dorm and the elevator was always broken.

Dinner time with Rose Romano's Italian Peppers, can you top that?

Tonight's dinner is all about Rose Romano's Italian Peppers. It's Thursday night, the hubby is home from a long business trip, one daughter is home from school, and I'll be cook and dishwasher, which means- I will load the dishwasher after dinner.

So, what did we have for dinner with Rose Romano's Italian Peppers? I made Chicken Ricadi, a  recipe from the cookbook that accompanied the jars of Italian Peppers.

There are  two types of  toppings, one with Marina and Red Bell Pepper, and one with Mariana and Green Bell Pepper.  The toppings are a creation to honor the Romano and Angotti families culture and cuisine brought from Italy to the United States. The product is all natural, and does not contain synthetic preservatives. It's fresh bell peppers simmered in Marina sauce, and we all gave it a thumbs up for taste and versatility.

Back to our dinner, Chicken Ricadi, a sandwich full of flavor and fresh taste.
Ingredients for this recipe are:
6 ounce boneless chicken breast, per sandwich, I used thin cut which is a little less than the 6 ounces.
eggplant slicked thick, one slice for each sandwich.

I grilled the chicken in a grill  pan with enough olive oil to cover the bottom of the pan.
In the same pan, after the chicken was cooked, I grilled the eggplant slices.

to make the sandwich use Ciabatta bread cut, and grill both sides.

Assemble the sandwich like this:
on one side of the bread layer:
1 tablespoon peppers, I used the red bell pepper marina
1 teaspoon grated Pecorino Romano cheese
1 chicken breast
2 ounces Provolone cheese
1 tablespoon Italian Peppers
top with other slice of Ciabatta bread

Reheat the sandwich in the pan to melt the cheese. Then sit down to dinner and enjoy!

We also enjoyed veggie pasta with green bell pepper marina. We used the red bell pepper in the sandwich. Both toppings were incredibly yummy. I can't wait to see how many foods my family will be topping with these jars of marina. I foresee weekend breakfasts of eggs and hash browns topped with green bell pepper marinara.

Rose Romano's Italian Peppers are a topping, you can use it on any food such as:
top a baked potato
top a scrambled egg
top your pasta
top any type of sandwich
top chicken, fish, beef, what ever you like.
top your bagel or muffin
top vegetables

Have you ever watched a show without the volume, as in hit the mute button? It's not as exciting without the music. Right. I'll admit, if I am watching a really scary show, I turn the sound off, then it's not as scary. However for NCIS Los Angeles, I don't ever turn the sound down. It totally makes the show.

My favorite track on this CD is Never Die by Daughtry. I liked him on American Idol and glad to see him doing so well. This CD has a nice variety of artists and songs.  LL COOL J and  Ne-Yo perform "No More".  It's only fitting that LL Cool J has a song on his show, right!

Being a Mom is an on the job learning experience every single second. We have to pay attention because our kids grow up way to fast. I know we all have those long nights when we are all tired, and babies are crying, but the joy of watching our kids grow up healthy, happy, and loved is so worth lack of sleep, because we can always take a nap!

My two girls are turning into young ladies, and young women. I home schooled them when others wondered why and how. It was our time to stay together and learn together. I never have regretted one day of homeschooling. By sixth grade I think we outgrew our school at home, and Dad and I enrolled them in a local Parochial School.  They were ready, they slide right into their appropriate grades and sailed through school with ease.
Maybe our families wondered how the girls learn all they needed to know.
Maybe people wondered why we all out shopping while it was "school hours"
Maybe their friends wondered why the girls got to stay home from "school" all day.
Maybe the school system even wondered what home schooling was.
Being a mom qualifies us to be their teacher.
To teach skills, values, and morales.
How to tie their shoes.
How to read.
How to spell.
How to do math, well my husband had to help in that area. I just don't like Math.
How to learn about other countries and their culture.
How to learn all the things "school kids need to know"
How to respect each other.
How to play nice, share, take turns.
We learned it all, all together.

What does conservation mean to you? For me it's more than a text book with "Conservation" in the title.

When I was in college I took a lot of conservation classes for my major. I enjoyed learning about the earth, the people of the world, and conservation. I learned all kinds of facts and figures on how much natural resource people consume everyday, how much trash we generate, and ways to conserve natural resources.

 At the time I was in college recycling was not really heard of for consumers. We did not have curb side recycling, we were not required to recycle anything, ever.  I took it upon my self to find a drop off place for glass, plastic, aluminum and paper that could be recycled from my parents house while I was still in college. I probably used more gas in the bigger than a yacht station wagon we had getting to the drop off site, but at least I felt I was doing my part.

Now cars are more environmentally friendly, recycling is required, and conservation is a household word. Isnt' that wonderful! I guess it was just a matter of time until we realized the dumps were getting too full, and our natural resources were being used up to fast.

 Recycling is part of our daily routine, every day.

How are we reducing our use of resources?

I use cold water to wash all of our laundry, in fact I have for many years.

I turned the heat down to 68 degrees Fahrenheit form 70. If someone says they are cold, I say put a sweater on or do some housework. Which do you think they do???

I am constantly telling the kids to turn the lights off in their rooms when they are not in them. There are so many times I go into their rooms to turn off their lights when I know they are watching TV in the family room.

I also open all the curtains in the house everyday to take advantage of the natural light instead of turning on lamps.

I use Cascade for the dishwasher, you don't have to rinse the dishes before putting them in the dishwasher, saving on H20 use.

What are you doing in your household to be conservative?
Are there areas in your home you could use less electric or gas resources?
Are you recycling everything you can?
Do you leave lamps on when no one is in that room?
Have you switched over to all reusable shopping bags yet?
Do you recycle plastic shopping bags?
Check with your local government on what types of things can be recycled and where and when the pick up or drop off location is located.

Our goal is simple: just use less of everything and their will be less to recycle! Recycling is super great, but I'd like to use less packaging, less over packaged products, and less processed foods and prepackage foods. Wish us luck, we are going to need it!
