What is your taste from home? Lay's® Regionally Inspired Chips giveaway for your neck of the woods.

Dried corn. If there was one dish I had to pick for A Taste of Home, dried corn is it. Holidays are not complete without dried corn in my family. My Grandmother made this every holiday, and now my Mother prepares it for our holiday dinner.  Grandmother dried farm fresh corn in her kitchen every Summer. Imagine a country house, without air conditioning, cooking corn on top the stove and then in the oven. Hot day.

Grandmother's Dried Corn

Husk fresh corn on the cob-as much as you want to eat
Remove silk
Place the cobs in boiling water, enough water to cover the cobs
Cook three minutes
Remove corn from the cob
Spread the corn out evenly on a jelly roll pan
Place in 250 degree Fahrenheit oven
Stir corn frequently
remove from oven when the corn is dry
cool completely
store in sterilized air tight jar

To cook the dried corn:

Place the desired amount of corn you wish to cook in a pan of cold water (enough water to cover the corn)
Bring to a boil
turn heat down to a simmer
stir frequently
Simmer until all the liquid is absorbed
add evaporated milk (to taste and consistency desired
add brown sugar (to taste)
Serve  (I'll be right over)

My Grandmother poured the cooled water from the cobs onto her garden out back.
The husks,silk, and cobs were put in the compost pile out back.
